Demonstrated at the Decatur Farmers Market on June 8, 2016
Ingredients:
- Zucchini from Mealor Family Gardens
- Sugar snap peas from Mealor Family Gardens
- Pattypan squash from Local Lands
- Red onion from Local Lands
- Ginger from Local Lands
- Kohlrabi from Partnership Farm
- Chili powder
- Salt and pepper
- Olive oil
- Barley (or other preferred grain)
Directions:
- Cook barley or other grain to serve with stir fry according to normal methods
- Peel and chop kohlrabi, peel and mince ginger, chop other veggies
- Heat olive oil in pan on medium high
- Add squash and zucchini and cook two minutes
- Add red onion and kohlrabi
- Add chili powder to taste, and add salt and pepper
- Add small amount of minced ginger (it’s strong!) and sugar snap peas
- Cook 2-4 more minutes or until squash reaches desired softness
- Serve over grains
