Demonstrated at Grant Park Farmers Market on May 13, 2018

Ingredients
  • Market:
    • Hearthfire Farms Flower Power Tea ($10.00)
    • Rag & Frass Strawberries ($15.00)
    • Lemon Balm from Cosmos Organic Farm
    • Mint from Cosmos Organic Farm
  • Pantry:
    • Sparkling water
    • Sugar

 Directions

This recipe makes quite a bit of simple syrup. For the average household we recommend halving or even quartering this recipe.

  1. In a large saucepan bring water to a boil. Once boiling remove from heat, add your tea mix, and cover letting steep for 5 to 10 minutes.
  2. After steeping strain the material from the water.
  3. Add the water back into the sauce pan with your sugar, chopped strawberries, and fresh chopped herbs.
  4. Slowly bring to a slow boil to allow the strawberries to fully break down and the sugar to be dissolved.
  5. Once the strawberries have been broken down strain the liquid again then add in the lemon juice.
  6. Allow to cool. Will keep stored in an air tight container in the fridge for up to a month. To use, start with 1 tbsp simple syrup to 1 cup of sparkling beverage of choice such as sparkling water, a lemon-lime soda, or champagne.
