Warm Apple Potato Hash

Demonstrated at Grant Park Farmers Market on September 10, 2017
Ingredients
- 1 lb fingerling potatoes – Rag & Frass Farms
- 1 Poblano pepper – Rag & Frass Farms
- 5 Jonagold apples – Mercier Orchards
- 1 pint figs – Crack in the Sidewalk Farmlet
- 1 bunch Harkurei turnips – Cosmos Organic Farm
- Sprigs rosemary/ sage – Freewheel Farm
- 1/4 cup olive oil
- 1 tbsp Kosher salt
- 1 tbsp black pepper
- 1 tsp cinnamon
Directions
- Heat 1/4c olive oil in pan
2. Add diced potatoes, cook until softened
3. Add diced turnips and diced turnips, then chopped sage, rosemary and spices.
4. Stir all ingredients and let sit for 3-5 min
5. Plate and garnished with sliced figs on top
