Green Bean Salad with Vidalia Sweet Sesame Dressing

Ingredients
  • Market:
    • Squash, Green Bell Peppers, Yard Long Beans from Global Growers ($13)
    • Vidalia Onions from Local Lands ($2)
  • Pantry:
    • Sesame oil
    • Tamari soy sauce
    • Sunflower oil
    • Apple cider vinegar
    • Date syrup
    • Onion powder
    • Garlic powder
    • Paprika powder
    • Coriander powder
    • Celery seed powder
    • Black pepper 


 Directions
  1. Start off by finely chopping one vidalia onion and putting into a large bowl with 1/4 cup soy sauce, 2 tablespoons apple cider vinegar, 2 tablespoons sesame oil, 2 tablespoons sunflower oil, 1 tablespoon date syrup, 2 teaspoons each garlic powder, onion powder, coriander powder, with 1 teaspoon each black pepper, paprika, and celery powder. Give it a good mix and set to the side.
  2. Chop 2 bundles of yard long beans (about 4 cups), 3 large green bell peppers, and 4 small tender yellow squash. In a large bowl combine combine all the chopped vegetables with the dressing and serve immediately or allow to marinate for an hour for a stronger flavor.
