Sesame Kholrabi Carrot Slaw on Kholrabi Chip

Ingredients
- Market:
- 2 Kholrabi from Crack in the Sidewalk Farmlet ($6.00)
- 1 brunch carrots from Mayflor Farm ($4.00)
- Mint from Mayflor Farm ($3.00)
- Summer Squash from Mena’s Farm ($3.00)
- Pantry:
- Sesame seeds
- 1 TBS Apple Cider Vinegar
- Shredded Ginger
- Juice of 2 Limes
Directions
- Using a grater, grate Kholrabi, carrots and half squash and combine in a bowl. Save 1 Kholrabi for “chips”.
- Then add sesame seeds and the dressing. Mix all the pantry items together.
- Use as a slaw, or shave the hard skin.
- Then slice into thin chips and use as a cracker and top with the Asian slaw.
- Use the chips to dip into guacamole, hummus, or any of your favorite treats.
