Caramelized Apple Onion Dip

Ingredients
  • Market:
    • Pure Abundance Luna Cashew Cheese from Golda Kombucha ($18)
    • Purple Onion from Local Lands ($5)
    • Apples from Watsonia Farms ($8)
    • Sesame and Multigrain Bread from Global Growers ($15)
  • Pantry:
    • Sunflower Oil
    • Apple Cider Vinegar
    • Onion Powder
    • Garlic Powder
    • Paprika Powder
    • Salt
    • Light Brown Sugar
    • Nutritional Yeast
    • Nutmeg

 Directions
  1. In a large skillet heat 1 tablespoon of sunflower oil.
  2. Add in 1 and a half chopped red onion, stirring it into the oil so that it is well covered.
  3. Cook the onion until slightly translucent then add in 4 chopped apples (I used 2 yellow apples and 2 red apples) then cover the skillet and allow to cook down for 10 minutes being sure to give it a stir every few minutes.
  4. Once the apple and onion mix has become softened and browned add in 1/4 cup apple cider vinegar and 2 teaspoons of light brown sugar.
  5. Mix the vinegar and sugar in thoroughly and cook for another 2 minutes then add in one package of chopped Luna Cashew Cheese from Pure Abundance.
  6. Feel free to use any light tasting, creamy cheese here, sour cream, or yogurt of your choice.
  7. Next add 3/4 cup of water with 1 tablespoon of onion powder, 1 tablespoon of nutritional yeast, 2 teaspoons of garlic powder, teaspoon of salt, 1/2 teaspoon of paprika powder, and a pinch of nutmeg.
  8. Combine all the added ingredients and cook on low until the mixture has thickened. Serve immediately warm as a spread for bread or chilled as a dip.
