Spring Arugula Salad with King of Pops Dressing

Ingredients
Dressing:
- 1 King of Pops Popsicle – Raspberry Rosewater or Strawberry Basil
- 1/4 cup Sunflower oil – Oliver Farms
- 1 Tbsp Apple Cider Vinegar
- 1 pinch of salt
- 1 pinch of onion powder
Salad:
- 1 Bag of Arugula from Cosmos Organic Farm
- 1 Pint of Strawberries from Watsonia Farm
- 1 container of Feta Cheese from Woodsman + Wife
Directions
Dressing:
Melt King of Pops Popsicle in a small bowl. Mix with 1/4 cup Sunflower oil, 2 Tbsp of ACV, 1 pinch of salt and 1 pinch of onion powder. Whisk together
Assemble salad:
Wash and remove strawberry tops, slice in halves. With a fork, crumble feta cheese. Add Feta and Strawberries to larger bowl with arugula and toss with KOP Salad Dressing.
