Caramelized Apple Onion Dip

Ingredients
- Market:
- Pure Abundance Luna Cashew Cheese from Golda Kombucha ($18)
- Purple Onion from Local Lands ($5)
- Apples from Watsonia Farms ($8)
- Sesame and Multigrain Bread from Global Growers ($15)
- Pantry:
- Sunflower Oil
- Apple Cider Vinegar
- Onion Powder
- Garlic Powder
- Paprika Powder
- Salt
- Light Brown Sugar
- Nutritional Yeast
- Nutmeg
Directions
- In a large skillet heat 1 tablespoon of sunflower oil.
- Add in 1 and a half chopped red onion, stirring it into the oil so that it is well covered.
- Cook the onion until slightly translucent then add in 4 chopped apples (I used 2 yellow apples and 2 red apples) then cover the skillet and allow to cook down for 10 minutes being sure to give it a stir every few minutes.
- Once the apple and onion mix has become softened and browned add in 1/4 cup apple cider vinegar and 2 teaspoons of light brown sugar.
- Mix the vinegar and sugar in thoroughly and cook for another 2 minutes then add in one package of chopped Luna Cashew Cheese from Pure Abundance.
- Feel free to use any light tasting, creamy cheese here, sour cream, or yogurt of your choice.
- Next add 3/4 cup of water with 1 tablespoon of onion powder, 1 tablespoon of nutritional yeast, 2 teaspoons of garlic powder, teaspoon of salt, 1/2 teaspoon of paprika powder, and a pinch of nutmeg.
- Combine all the added ingredients and cook on low until the mixture has thickened. Serve immediately warm as a spread for bread or chilled as a dip.
