Recipe: Confit Fingerling Potatoes

Demonstrated at the Westside Farmers Market on Sunday, April 10, 2016 

Ingredients:

  • Fingerling Potatoes
  • Bacon Butter (Spotted Trotter)
  • Spring Onion
  • Chives
  • Mustard Green Florets
  • Breakfast Radish
  • English Peas

 

Directions:

Slice potatoes in half, confit them in the bacon butter and add chopped spring onions, chives, mustard green florets, breakfast radishes and blanched english peas.
