We welcome the market season with a fresh crop of juicy strawberries! Jenna shares strawberry read-a-louds on our Youtube page, and Ilene has shared a creative strawberry sauce with us on Instagram.
Strawberries are in and they are sweet as ever! Of course, they are great as is, but if you ever want to stretch them out into something extremely versatile, this effortless recipe is it. @ilenerouamvongsor made a strawberry sauce that you can use on salads (and the market is abundant in leafy greens), a yogurt parfait (seen in picture above), spoon in between layers of cake, drizzle on pancakes – the list is nearly never ending!

Cut leafy tops off of strawberries and slice them in quarters or halves. On medium heat, add 2 TB of sugar or you can use honey or maple syrup or any sweetener to your preference. I find that a little sugar helps thicken better. Zest 1 tsp of lemon rind, add 1 TB of balsamic vinegar, and a pinch of salt. The strawberries will start to cook down. Give a gentle stir and when it becomes saucey enough to stick to the back of a metal spoon, that’s a great indicator that it’s ready. Allow to cool down for 10-15 minutes and transfer to a blender and blend until smooth. You can refrigerate this for a week and a half or freeze it. Enjoy, ya’ll!
