🥕 Spicy Miso Cucumber Salad 🥒

Try out this recipe curated by Educational Chef Tatiana (@taurus.season.food ) A refreshing, umami-packed salad with a spicy kick—perfect as a side dish or light meal for this holiday weekend!

Ingredients
For the salad:
* 2 medium cucumbers (@cosmos.farm )
* 2 medium carrots (@cosmos.farm )
* 3-4 shiso, thinly sliced (@ecosunfarms )
* 2 cloves garlic, minced
* 1 tbsp toasted black and white sesame seeds
For the dressing:
* 1 tbsp white or red miso paste
* 2 tbsp tamari (or soy sauce)
* 1 tbsp brown sugar
* 1 tbsp sesame oil
* 1-2 tbsp chili oil (adjust to heat preference)
* 1 tsp rice vinegar
* Fresh cracked black pepper, to taste
* Pinch of salt (be careful—tamari and miso are already salty)

Instructions
1. Prep the cucumbers: Wash and slice the cucumbers into rounds. Place in a bowl and lightly salt them. Let sit for 10 minutes to draw out excess moisture, then pat dry.
2. Make the dressing: In a small bowl, whisk together the miso paste, tamari, brown sugar, sesame oil, chili oil, and rice vinegar until smooth. Taste and adjust seasoning.
3. Combine: Toss the cucumbers with the dressing, ensuring they’re well coated. Let marinate for 5-10 minutes to absorb flavors.
4. Finish: Add the green onions, garlic, sesame seeds, roughly crushed roasted peanuts and torn Thai basil leaves. Give it a final gentle toss to distribute the herbs without crushing them.
5. Serve: Enjoy immediately or chill for up to 2 hours. The flavors deepen over time.

🍑 Creamy Basil Fruit Salad 🍋‍🟩

Try out this fruit salad curated by our Educational Chef Rayven (@sunbellyfoods) featuring peaches, plums, basil, honey and lemon juice. A delicious way to stay hydrated during these current and upcoming heat waves 💦

- 3 ripe Peaches chopped (@georgiapeachtruck )
- 4 ripe Plums chopped (@georgiapeachtruck )
- 3 or sprigs of basil chopped (@patchworkcityfarms , @cosmos.farm )
- 2 tbsp of crumbled goat or feta cheese (@windswept_goat_dairy , @rosemaryandthymecreamery )
- 1 lemon juiced
- 1 tsp of honey

1. Mix everything together & enjoy on top of toast or a crostini for appetizers! 🥖🌿
