Summer Soup Medley

Demonstrated at Grant Park Farmers Market on June 25, 2017
- 1 large zucchini – Crack in the Sidewalk
- 2 cucumbers – Cosmos Organic Farm
- 1 lb heirloom cherry tomatoes – Rag & Frass Farms
- 1 lb onion – Mena’s Farm
- 1 clove garlic – Mena’s Farm
- 1 lg sprig basil – Freewheel Farm
- 1 lg sprig oregano – Freewheel Farm
- 5 cups of water
- Sea salt to taste
- Dice all ingredients and simmer with water in large stock pot for 10 minutes.
- Add your favorite seasonings at the end like cayenne, smoked paprika, curry, ginger, etc.
